Kripalu Recipe: Lemon Poppy Seed Bread
This satisfying sweetbread is made with healthy grains, nutritious sunflower oil, and absolutely no sugar. Enjoy!
Makes one 8 1/2" × 4 1/2" loaf.
1/3 cup flaxseed meal
1/4 cup water
2 cups barley flour
2/3 cup oat flour
1/3 cup poppy seeds
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup maple syrup
1/2 cup sunflower oil
2 tablespoons prepared applesauce
1/2 cup soy milk
1/3 cup fresh lemon juice
1 tablespoon lemon extract
2 teaspoons vanilla extract
Zest of one lemon
Preheat oven to 375 degrees. Grease loaf pan thoroughly.
In a small container, combine flaxseed meal and water and let soak for at least 30 minutes or overnight.
Combine barley flour, oat flour, poppyseeds, baking powder, baking soda, and salt in a large bowl and mix well; set aside.
In a separate bowl, mix the remaining ingredients together with the soaked flax meal.
Make a well in the dry ingredients and pour the wet ingredients into the well. With a wire whisk, stir in a circle, starting in the center, gradually incorporating the outer dry ingredients. Transfer to prepared pan.
Bake until bread is golden brown and edges begin to shrink from sides of pan, about 40 minutes. A toothpick inserted in the center should come out clean. Let cool in pan. To remove from pan, turn pan over and tap lightly to release. Slice and serve.
